Our Rusk Recipe

Everybody has asked for our rusks recipe....low GI and Low Fat.

Ingredients:

Cream together:
250 gram Margarine (low fat, Flora Pro-Active)
60ml Macadamia Oil
1 cup of Sugar (or to taste)
3 Eggs
500ml  low fat Yogurt (fruit or plain)
5ml Vanilla essence

DRY INGREDIANTS:
2 cups Oat Bran (or 1 cup oats and 1 cup oat bran)
2 cups Wheat Bran
2 cups wholewheat Pronutro
2 cups All Bran Flakes
2 cups Brown Flour
2 cups White Flour (to make up 900 to 1000gm dry weight)
1 tsp Salt
50ml Baking Powder
1 tsp Baking Soda
Add: seeds, nuts, sultanas, muesli, Cranberries to taste +- 2 to 3 cups.

Add  the wet ingredients and dry ingredients…mix well.
Bake in a greased pan for 1hr 15 min at 180C

Cool before cutting into small rusks….dry overnight in a 90C oven, put a wooden spoon in door to keep slightly open so that moisture can escape.

Eat and enjoy.
