Our Rusk Recipe

Everybody has asked for our rusks recipe....low GI and Low Fat.

Ingredients:

Cream together:
250 gram Margarine (low fat, Flora Pro-Active)
60ml Macadamia Oil
1 cup of Sugar (or to taste)
3 Eggs
500ml  low fat Yogurt (fruit or plain)
5ml Vanilla essence

DRY INGREDIANTS:
2 cups Oat Bran (or 1 cup oats and 1 cup oat bran)
2 cups Wheat Bran
2 cups wholewheat Pronutro
2 cups All Bran Flakes
2 cups Brown Flour
2 cups White Flour (to make up 900 to 1000gm dry weight)
1 tsp Salt
50ml Baking Powder
1 tsp Baking Soda
Add: seeds, nuts, sultanas, muesli, Cranberries to taste +- 2 to 3 cups.

Add  the wet ingredients and dry ingredients…mix well.
Bake in a greased pan for 1hr 15 min at 180C

Cool before cutting into small rusks….dry overnight in a 90C oven, put a wooden spoon in door to keep slightly open so that moisture can escape.

Eat and enjoy.

3 Days to go

Caravan ready....packed in some groceries ect. Clothes will be packed in today.
Rusks made for the trip..needed 500.
Leave Saturday for Karoo National Park (believe Sylvester the Lion escaped again)

Itinerary for 2016

We leave on 2 April 2016 for Kruger National Park

We are taking our new caravan on its first trip to Kruger after extensive customization.

First stop will be
  • Karoo National Park for 2 nights.
  • Gariep Dam for 1 night.
  • Golden Gate National Park for 3 nights where we intend to visit the art Galleries in Clarens and play golf at Clarens Golf and trout resort. 
  • Royal Natal National Park (Mahai camp) for 6 nights, lots of walks and golf at the Amphitheater golf course.
  • Cedar Lakes with Kim and Peter and our beautiful 2 girls. 
  • Satara KNP arrive 17 April for 45 nights.
  • Lower Sabie arrive 1 June for 26 nights leaving on the 27 June.
At this stage we will decide whether we come back or extend our holiday.

We will give regular updates on our progress and sightings and hope to share as much as we can with you.
